A delightful combination of flavors and textures, this dish pairs the sweetness of honey-roasted pears with the salty bite of halloumi and the peppery freshness of rocket, all served atop crispy toast. Perfect for brunch, lunch, or a light dinner.
For the honey-roast pears:
• 2 ripe pears (cored and sliced)
• 2 tbsp honey
• 1 tbsp olive oil
• 1 tsp fresh thyme leaves
For the toast:
• 4 slices of sourdough bread (toasted)
• 200g halloumi cheese (sliced)
• 1 tbsp olive oil for frying
For assembly:
• 2 handfuls of fresh rocket leaves
• 2 tbsp crushed walnuts (optional)
• Additional honey for drizzling
Step 1: Roast the pears
1. Preheat your oven to 200°C (390°F).
2. Toss the pear slices with honey, olive oil, and thyme in a baking dish.
3. Roast for 15–20 minutes, turning halfway, until golden and caramelized.
Step 2: Fry the halloumi
1. Heat olive oil in a non-stick pan over medium heat.
2. Fry the halloumi slices for 2–3 minutes on each side until golden brown.
Step 3: Assemble the toast
1. Lay the toasted sourdough on serving plates.
2. Top each slice with rocket leaves, caramelized pears, and fried halloumi.
3. Sprinkle with crushed walnuts (if using) and drizzle with additional honey.
Step 4: Serve
1. Serve immediately while the pears and halloumi are warm.
