A show-stopping savory tarte Tatin made with sweet, caramelized shallots and buttery, flaky pastry, paired with the creamy tang of whipped goat’s cheese. This elegant dish works beautifully as a starter, a light main course, or a decadent centerpiece for your next gathering.
For the tarte Tatin:
• 500g shallots (peeled and halved lengthwise)
• 2 tbsp olive oil
• 30g unsalted butter
• 2 tbsp brown sugar
• 2 tbsp balsamic vinegar
• 1 sheet of puff pastry (vegan if desired)
• Fresh thyme for garnish
For the whipped goat’s cheese:
• 150g goat’s cheese
• 50ml double cream
• Pinch of black pepper
Step 1: Caramelize the shallots
1. Preheat your oven to 200°C (390°F).
2. Heat olive oil and butter in an oven-safe skillet over medium heat. Add the shallots cut-side down and cook for 5 minutes until golden.
3. Sprinkle the brown sugar and balsamic vinegar over the shallots. Cook for another 5 minutes, stirring gently to coat them in the caramelized mixture.
Step 2: Assemble the tarte
1. Roll out the puff pastry and cut it slightly larger than the skillet diameter.
2. Place the pastry over the shallots, tucking the edges around them.
3. Bake in the preheated oven for 25–30 minutes or until the pastry is golden and puffed.
Step 3: Prepare the whipped goat’s cheese
1. In a bowl, combine goat’s cheese, double cream, and black pepper.
2. Whip using an electric mixer or by hand until smooth and fluffy. Chill until ready to serve.
Step 4: Serve
1. Allow the tarte to cool slightly before inverting onto a serving plate.
2. Garnish with fresh thyme and serve with a dollop of whipped goat’s cheese on the side.
