This Christmas seafood platter is the ultimate indulgence for the holiday season. Featuring a luxurious array of fresh seafood, from oysters and prawns to smoked salmon and crab claws, it’s a show-stopping centerpiece for festive gatherings. Serve with an assortment of dipping sauces for a perfect celebratory spread.

Ingredients

Seafood Selection:

• 12 freshly shucked oysters

• 500g king prawns (cooked and peeled)

• 250g smoked salmon (rolled into roses)

• 6 crab claws

• 2 lobster tails (cooked and sliced)

• 200g mussels (steamed and chilled)

For garnish:

• Lemon wedges

• Dill sprigs

• Crushed ice

Dipping Sauces:

Classic Mignonette Sauce:

• 1/4 cup red wine vinegar

• 1 tbsp shallots (finely chopped)

• 1/4 tsp freshly cracked black pepper

Garlic Aioli:

• 1/2 cup mayonnaise

• 1 clove garlic (minced)

• 1 tsp lemon juice

Sweet Chili Sauce:

• 1/4 cup sweet chili sauce

• 1 tsp lime juice

Instructions

Step 1: Prepare the seafood

1. Ensure all seafood is fresh, cleaned, and chilled. Arrange oysters on one side of the platter over crushed ice.

2. Place prawns, crab claws, lobster tails, and mussels around the platter, ensuring an even and visually appealing arrangement.

3. Roll smoked salmon into rose shapes and tuck them between other seafood for a decorative touch.

Step 2: Make the dipping sauces

1. For the mignonette sauce, combine red wine vinegar, shallots, and black pepper in a small bowl.

2. For the garlic aioli, mix mayonnaise, minced garlic, and lemon juice in another bowl.

3. For the sweet chili sauce, whisk together sweet chili sauce and lime juice in a separate bowl.

Step 3: Assemble the platter

1. Add crushed ice to a large serving tray or platter. Arrange seafood on top, leaving space for small bowls of sauces.

2. Garnish with lemon wedges and fresh dill sprigs for a festive touch.

Step 4: Serve

1. Serve immediately, ensuring the seafood remains chilled throughout.
